20 mins prepServes 4
A comforting dish featuring mafaldine pasta paired with perfectly cooked salmon and tender roasted vegetables, all coated in a rich and creamy Parmesan sauce.
1. Cook mafaldine pasta according to package directions.
2. Spread broccoli florets, cauliflower, and chopped carrots evenly on a baking sheet. Drizzle with 1 tablespoon of olive oil and lightly coat with salt, pepper, garlic powder, and onion powder. Bake at 425°F (220°C) for 15 minutes.
3. Lightly coat the salmon filets with garlic salt, Old Bay seasoning, and lemon pepper seasoning. Fry the salmon in olive oil on medium-high heat for about 3 minutes on each side, or until the salmon flakes easily with a fork.
4. Remove the salmon from the pan. Reduce the heat and add butter, chicken broth, heavy cream, grated Parmesan, 1 tsp salt, 1 tsp cracked pepper, fresh basil, minced garlic, and cornstarch. Whisk well and let the sauce simmer for about 10 minutes, or until thickened.
5. Once the sauce has thickened, add the cooked vegetables and pasta. Toss to coat.
6. Serve the pasta and vegetable mixture topped with the cooked salmon filets.
