A creamy and flavorful white chicken chili made with chicken breast, cream cheese, white beans, corn, green chiles, and a blend of chili seasonings. Perfect for a comforting meal, topped with sour cream, cheese, and tortilla chips.
Start by seasoning the chicken breast with adobo, garlic powder, onion powder, and Slap Ya Mama seasoning. Sear the seasoned chicken in a Dutch oven for about 10 minutes on each side on medium-high heat. Once cooked, remove the chicken from the pot, then chop it up or shred it. Add the chopped white onion and minced garlic to the pot and let it simmer for a couple of minutes. Then, add about 1 to 2 cups of chicken broth. Next, add the block of cream cheese, cover with a lid, and let it simmer for about 5-10 minutes. Whisk until the cream cheese is almost all melted down and incorporated. Add the chopped/shredded chicken back to the pot, along with the beans, corn, green chiles, and chili seasonings (paprika, cumin, oregano, cilantro, chili powder, and salt, to taste). Let it simmer for about 10-15 minutes on medium heat. Serve hot with your preferred toppings such as sour cream, cheese, and tortilla chips.
